What a mouth-full, is a recipe title with all those delicious ingredients really real?! You better believe it, these no bakes are easy AND absolutely amazing. Using coconut oil instead of butter means that they’re a little more gooey than usual and don’t harden up as much as the usual recipe for no bakes, so we recommend storing them in the fridge.

There’s still a good amount of sugar or sweetener in these cookies, but with all the healthy fatty acids in coconut oil, and protein from nut butters, these no bakes make an awesome mini-breakfast or midday snack.

Coconut Peanut Butter Chocolate No Bake Cookie Recipe

Ingredients:

  • 3 cups oats
  • 3/4 cup shredded coconut
  • 1/2 cup milk
  • 1/2 cup peanut butter
  • 1/4 cup almond butter (or just use 3/4 cup total of your favorite nut butter!)
  • 1/2 cup cocoa powder
  • 1 1/2 cups sugar
  • 1/2 cup coconut oil
  • 1 package candy eggs

Put oats and coconut in a large bowl and set aside. In a pan, combine the remaining ingredients over low and bring to a boil for 4 minutes while stirring to prevent scalding the bottom of the pan. Pour over the oats and coconut to mix together, and form “bird’s nests” on wax paper. Immediately place eggs in the center of each, and refrigerate to set!
