“There’s VEGGIES in here?!” The taste testers at CE Headquarters couldn’t believe it, and we figured our kid taste tester just didn’t need to know!
While “hidden veggies” might be popular and are a super easy way to get veggies to your kids, we’re definitely not suggesting that you replace plain old veggies in your kids’ menu. Encouraging your little ones to eat their veggies is an important thing for them to get used to as a norm of a healthy and balanced lifestyle. However, no one can argue that a little comforting mac n’ cheese won’t get you so excited about lunch that you might even scarf down the greens next to the cheesy goodness too!
Why cauliflower is our hidden centerpiece…
The main star in this dish is cauliflower, the funky overlooked cousin of broccoli that is always the last one left on the veggie tray. It’s bland white color is contrary to the broad spectrum of nutrients packed in these funky brain-looking vegetable (it even has B Vitamin which actually is good for YOUR brain!). Cauliflower has tons of Vitamin C, Vitamin K, phosphorus, riboflavin, thiamin, niacin, magnesium, fiber, folate, pantothenic acid, potassium, AND manganese. Wow, quite the list, but all essential nutrients that your body craves to perform in tip-top condition!
In addition to these nutrients, there are even more antioxidants packed in to resist aging decline (maybe your little one won’t have to worry about this for a while, but it can’t hurt for you or for them!). It also has sulforaphane, which is great for heart health and circulation. Plus, believe it or not, but sulforaphane has been seen in studies to kill stem cancer cells, reducing tumor instances and reducing the size of existing tumors! Who would have thought that this funky bland colored vegetable could do so much?! That’s why it’s the hidden true centerpiece of this delicious dish.
Comforting and Wholesome Mac n’ Cheese Recipe
- 1 head cauliflower (cut up)
- 6 carrots sliced
- 2 cups butternut squash
- 1 cup broth
- 1 8oz. package cream cheese
- 3 Tbs. butter
- 2 tsp. salt
- 1/2 cup milk
- 2 cups shredded cheddar cheese
- 1/3 cup nutritional yeast
- 1 1/2 to 2 pounds pasta
In a large pot, steam the cauliflower, carrots, and butternut squash until soft (about 10 minutes). Drain and let cool, then puree with the broth. Add puree to a large saucepan and melt in the cream cheese, butter, milk, cheese, nutritional yeast, and salt. Once the mixture is smooth, mix in pasta and you’ve got the BEST Mac n’ Cheese!
The veggie undertones of this dish make it even more warming and creamy than plain Mac n’ Cheese, so you can enjoy this classic comfort food even more!
